Coconut, Apricot + Einkorn Oaty Cookie Mix
This recipe is our own spin on the classic Anzac biscuit - a firm favourite at the bakery. We’ve added apricot chunks for that chewy fruity tang, wholemeal Einkorn flour for a nutty undertone and switched butter for olive oil making them vegan friendly. Perfect for snacking on a long walk or dunking in a cuppa tea.
Makes 8 cookies!
Ingredients: Organic jumbo oats, organic desiccated coconut, Shipton Mill organic einkorn wholemeal flour *(wheat), soft brown sugar, organic dried apricots, bicarbonate of soda, Maldon flaked sea salt, organic rice flour.
